Tenuta Santa Maria Amarone

PHILOSOPHY: This Amarone is obtained with the use of traditional vinification techniques that give a unique and recognizable character. It represents the full expression of the veronese wine growing and enological tradition in accordance with more than a century of old family tradition.

TYPE OF SOIL:  Located on clay hills and calcareous layers.

VARIETAL: Corvina 75%; Rondinella 10%; Corvinone 15%

HARVEST PERIOD: End of September

TRAINING: Pergoletta 5600  vines per hectare.

HARVEST VINIFICATION AND AGING: The Amarone is produced from the best  grapes  of the Vapolicella hills, hand harvested and placed in wooden  trays  inside rooms  with well circulated natural air  for 4-5 months. Around the middle of January and after reaching the desired sugar content (And  reduction of about 25%-30% of weight) the  grapes almost raisins are pressed and fermented for 25-30 days at controlled temperature with daily 
pumpover. Follows a period of decantation and  refining  in french barriques and italian oak tonneaux where  the malolattic fermentation  is also  carried out . After 48 months the wine is bottled for a further 6  months final refinement.

ANALYTICAL DATA: 15% Vol.

TASTING NOTES: Ruby red color with garnet nuances. The bouquet impact is elegant and complex,  reminiscent of  cherry jam, dried roses and hot spices. The taste is warm and soft with vigorous structure and alcohol balanced by soft tannins and elegant acidity.

SERVING TEMPERATURE: 15°/18° C

BEST WITH: Red meat, game, savory cheese, Monte Veronese cheese.
